Creamy Lemon Pistachio Crunch

Ingredients

1 bag Asturi® Bruschettini® CLASSICO

7 oz ricotta cheese 

Zest of one lemon (save half for garnish)

Lemon Juice (approx 1 oz or 2 tbsp )

3/4 tbsp honey (to mix with ricotta cheese)

1/2 tbsp honey (for garnish)

1/4 cup pistachios, finely chopped

1/8 tsp pepper

1/8 tsp sea salt

Sea salt flakes (garnish to taste)

Directions

Start with a crispy Asturi® Bruschettini® CLASSICO as your base. 

In a small blender, mix together ricotta cheese, lemon zest, lemon juice, 3/4 tbsp honey, pepper, salt until whipped

Chill whipped ricotta mixture in the refrigerator for about 1 hour 

Once chilled, top each Bruschettini with one teaspoon scoop of whipped ricotta 

Add 1/8 tsp of chopped pistachio 

Garnish with a drizzle of honey, lemon zest, and sea salt flakes to taste

Makes approx 30 Bruschettini® bites; perfect to serve as an appetizer or easy snack!
